A fried chicken shop in Japan recently won Gold at the Japan Fried Chicken Grand Prix. According to the shop’s owner, the key to the win was their 66-year-old cooking oil.
Instead of changing it daily, they filter the oil to remove crumbs, food residue, and dirt, then top off the tank with fresh oil. Some things are better left unsaid.
But there’s something to be said about how accumulated experiences become invisible infrastructure.
